BLACK BEAN SALAD WITH FETA 
2 (15 oz.) cans black beans
3/4 c. crumbled feta cheese
1/3 c. thinly sliced red onion
1/3 c. chopped fresh mint leaves
1/4 c. fresh lemon juice
3 tbsp. light olive oil
1/4 tsp. salt
1/4 tsp. pepper

Drain and rinse black beans. Combine all ingredients in a bowl. Toss to coat well. Refrigerate 30 minutes to blend flavors. Serve garnished with fresh mint leaves. Serves 8. Do not make a day ahead as mint tends to lose its flavor.
