MICROWAVE APRICOT OATMEAL BARS 
1/2 c. chopped dried apricots
1 egg
1/2 c. cooking oil
1/2 c. quick oatmeal
1/2 c. whole wheat or all-purpose flour
1/3 c. water
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. cloves
Powdered sugar, if desired

Combine apricots and water in 1 quart microwaveable bowl, microwave on high uncovered for 2 1/2 to 3 minutes or until apricots are softened, stir once. Let stand for 5 minutes. Then blend in sugar, egg and oil. Add oats and flour and spices, stir just until moistened. Spread in ungreased 10 x 6 inch microwave safe baking dish.

Microwave on high for 4 1/2 to 5 minutes or until top springs back when lightly pressed with finger. Invert on serving platter immediately. This makes a good dessert when served with vanilla ice cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.
