CHICKEN CASSEROLE 
1 3/4 c. minute rice
1 3/4 c. boiling chicken broth
6 chicken breasts, cooked & cut in 1" cubes
4-6 oz. grated Cheddar cheese
2 (10 oz.) pkg. broccoli
1/2 c. pimento
1 c. mayonnaise
2 cans cream of chicken soup
Juice of 1/2 lemon
4 oz. dried bread crumbs

Grease 9 x 13 inch pan. Put rice in bottom. Add broth and cover with grated cheese. Lay broccoli over cheese. Sprinkle chopped pimento over broccoli and then lay cubed chicken over.

Mix soup, lemon juice and mayonnaise; pour over above. Bake for 1 hour at 325 degrees, remove and sprinkle buttered bread crumbs and Parmesan cheese and return to oven for 15 more minutes.
