MICROWAVED ORANGE ROUGHY
ALMONDINE
 
1 1/2 lb. fillets (does not have to be orange roughy)
1/4 c. snipped parsley
2 tbsp. lime juice
1/4 tsp. salt
Dash pepper
1/2 c. sliced almonds or more if desired
Onion slices if desired
3 tbsp. butter

Arrange fillets in 10 x 6 glass baking dish. Sprinkle with parsley, lime juice and salt and pepper. Cover with plastic wrap. Microwave on high 5 to 6 minutes or until fish flakes easily with fork, rotating dish once. Set aside covered. Combine almonds, onions, and butter in 9 inch glass pie plate. Microwave (high) uncovered 3 to 4 minutes or until lightly toasted stirring once or twice (can do this in fry pan on stove if desired). Transfer fish to serving platter and pour almond mixture over.

Since microwave ovens vary in power, you may need to adjust your cooking time.
