ZESTY PEACH SALAD | |
1 can sliced peaches 1/2 tsp. basil, crushed 3 tbsp. red wine vinegar 2 tbsp. olive oil 1 tsp. Dijon mustard 1/2 tsp. paprika 6 to 8 c. torn salad greens 1/2 c. thinly sliced cucumber 1/3 c. thinly sliced red onion, separated into rings Drain fruit, reserving liquid. In small saucepan, combine reserved liquid and basil. Bring to a boil. Boil 5 minutes, stirring constantly; cool. Add vinegar, oil, mustard and paprika. Combine salad greens, cucumber and onion. Just before serving, add fruit and toss with dressing. Makes 6 servings. |
