CRISPY OVEN FRIED CHICKEN 
1 fryer, cut in serving pieces
1 c. cornflake crumbs
2 to 3 tbsp. Canola oil
1 tsp. poultry seasoning (optional)
Salt and pepper to taste

Preheat oven to 400 degrees. Remove all skin from chicken pieces, rinse and pat dry thoroughly. Sprinkle with seasoning, rub with oil and roll in the crumbs. Let stand for few minutes to "set" the coating. Place in oiled pan. Do not crowd. Bake 45 minutes or more. Serves 4.
