CRISPY OVEN FRIED CHICKEN 
12 pieces chicken, skinned & all visible fat removed
1/4 c. vegetable oil
1/4 tsp. salt, optional
Freshly ground black pepper to taste
1 tsp. ground ginger, or to taste
1 clove garlic, crushed (optional)
1 tsp. paprika
4 c. wheat flake cereal, lightly crushed

1. Preheat oven to 350 degrees.

2. Rinse chicken and pat dry.

3. Combine salt, pepper, ginger, garlic and paprika in a small bowl. Mix spices with the crushed cereal.

4. Place cereal in a pie plate or on a piece of foil.

5. Brush each piece of chicken on both sides with oil, then dip in cereal crumbs pressing lightly to get an even coating on all sides.

6. Place on an ungreased baking sheet.

7. Bake 45-60 minutes or until chicken is golden brown and tender. Timing will vary according to the thickness of the chicken pieces.

This recipe is done with skinned, defatted chicken, vegetable oil and cereal to cut down on cholesterol.

Before coating with the cereal mixture, it would be better if, instead of dipping it in oil, it is dipped in diluted egg yoke. With oil coating the cereal coating will come off when baked. Also, instead of cereal, corn flour would be a better choice.
