LUSCIOUS LEEKS 
6 (thin) leeks
1 tbsp. butter, melted
Grated Parmesan cheese
2 tbsp. water
Chopped chives

Cut the green part and the roots from the leeks and wash them well. Cut into 2" pieces. Place in flat baking dish, add water and cover with plastic wrap. Microwave on high for 4 minutes; turn and microwave on high for another 4 minutes, or until tender. (Steaming works as well as microwaving.) When done, discard the liquid. Sprinkle the butter, chives and cheese over leeks and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
