LIGHT CHICKEN CORDON BLEU | |
8 chicken breast halves, skinned and boned 8 (3/4 oz.) slices lean, cooked ham 3 (3/4 oz.) slices Swiss cheese 3 tbsp. parsley 1/2 c. seasoned bread crumbs 1/2 tsp. paprika 1/4 tsp. salt 1/4 tsp. pepper 1/2 c. skim milk Vegetable Cooking Spray Place each chicken breast between 2 sheets of waxed paper. Flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Place 1 slice of ham and 1 slice of cheese in the center of each chicken piece. Sprinkle centers with the parsley. Roll up lengthwise and secure with wooden toothpicks. Combine bread crumbs, paprika, salt and pepper. Dip each chicken breast in milk, roll in bread crumb mixture. Place chicken in a 12 x 8 x 2 inch baking dish coated with cooking spray. Bake uncovered at 350 degrees for 30 minutes. Serves 8. |
