JENNIE'S DELICIOUS WHITE CAKE 
1 1/2 c. sugar
1 scant c. butter or Spry
1 c. cold water
Pinch of salt
1/4 tsp. vanilla
1/4 tsp. lemon extract or almond extract
2 1/2 c. cake flour
4 level tsp. baking powder
5 egg whites

Beat sugar, butter, water, salt, vanilla, flour and baking powder. Beat well. Fold in 5 egg whites. Bake until cake tests done. Top cake with Lemon Filling: 1 c. water 4 tbsp. cornstarch 1/2 tsp. salt 2 tbsp. lemon rind, grated 1/2 c. lemon juice 2 tbsp. butter

Cook in double boiler until thick. Top with seven minute frosting.
