PORK BARBECUE | |
Use fresh ham or picnic shoulder (4 to 5 pounds). Remove as much fat and skin as possible. Cover with the following: 1/4 c. Worcestershire sauce 1/4 c. vinegar 1/2 c. catsup 2 lg. onions, cut up Garlic powder or clove Dash of Tabasco 1 tsp. salt 4 tbsp. brown sugar Sprinkle of ground cloves 1 tsp. liquid smoke 1 qt. tomatoes Cover and cook in 350 degree oven for 3 hours. Sprinkle with liquid smoke again (1 teaspoon). Remove lid and cook at 275 degrees until meat falls off the bone, about 2 hours. Shred and mix. I am generous with seasonings. |
