ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
1 med. zucchini, peeled and grated (2 c.)
1 c. nuts
3 c. self rising flour
3 tsp. cinnamon
1 tsp. nutmeg

Beat eggs, sugar and oil. Add vanilla. Stir in zucchini. Stir in flour with cinnamon and nutmeg. Put into egg mixture. Stir and add nuts. Put into 2 well greased bread pans and bake at 325 degrees for 60 to 75 minutes.
