MOUNTAIN CASSEROLE CHEESE BREAD 
Scald 1 cup of milk. Stir in 3 tablespoons sugar, 1 teaspoon salt, 1 tablespoon butter. Cool to lukewarm.

Measure 1 cup warm water into large bowl. Sprinkle in 2 packages dry yeast. Stir until dissolved. Add lukewarm milk mixture, 1 cup grated Cheddar cheese, 4 1/2 cups sifted flour. Stir until well blended, 2 minutes. Cover and let rise in warm, draft-free place, until double in bulk, about 45 minutes.

Stir batter down. Beat vigorously about 1/2 minute. Turn into greased 1 1/2 quart casserole or 2 loaf pans. Bake at 375 degrees for about 1 hour.
