CRAZY PINEAPPLE PIE 
1 c. buttermilk baking mix, such as Bisquick
1/4 tsp. ground cinnamon
2 tbsp. butter
1 can (20 oz.) juice-packed crushed pineapple
2 tbsp. brown or white sugar
4 packets low-calorie sweetener

Combine biscuit mix, cinnamon and butter in electric mixer bowl or food processor fitted with steel blade; process into crumbs. Sprinkle half the crumbs evenly on the bottom of a 9 inch glass pie plate. Spoon on half the pineapple. Sprinkle with sugar. Add the remaining pineapple, including the juice. Sprinkle the top with the remaining crumbs. Bake, uncovered, on the bottom shelf of a preheated 400 degree oven for 20 to 25 minutes, until golden brown.

Remove from the oven and allow to cool before slicing in wedges to serve. When cool, sprinkle with low-calorie sweetener. Makes 8 servings, 137 calories each.
