SWEDISH MEATBALLS 
MEATBALLS:

1 1/2 lbs. ground beef
1 egg
2/3 c. cracker crumbs
1 tbsp. shortening
Salt (opt.)
1/4 tsp. ginger
1/4 c. milk

SAUCE:

2 tbsp. cornstarch
1/2 c. brown sugar
1/3 c. vinegar
2 tbsp. soy sauce
Juice from 13 oz. can pineapple
1/3 c. green peppers

MEATBALLS: Mix above ingredients except shortening. Form into 1" balls. Brown in shortening until cooked.

SAUCE: Stir ingredients until smooth. Cook in skillet over medium heat, stirring until thick. Boil 1 minute. Mix with meatballs, pineapple and green peppers. Stir over medium heat until warm. Serve over rice. Serves 4.
