PERSIMMON BREAD 
3 c. brown sugar
1 1/2 c. sugar
1 1/2 c. oil
6 eggs
3 1/2 c. pureed persimmons
3 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
3/4 tsp. ginger
6 c. flour
Chopped nuts, optional

Preheat oven to 350 degrees.

Cream together sugars, oil and persimmon pulp. Add dry ingredients, mixing thoroughly. Stir in nuts, if desired. Bake 1 to 1 1/2 hours at 350 degrees.
