BLENDER HOLLANDAISE SAUCE 
1 stick butter
3 egg yolks
Salt
Pepper
Juice of 1/2 lemon
1/2 c. boiling water

Combine all but boiling water in the blender. Add water and blend until smooth. Put in top of double boiler and cook over hot, not boiling water until thick. If you don't let the water boil, this NEVER FAILS. Can be made several days ahead.
