CHILES RELLENOS 
2 cans Ortega peppers (whole)
6 eggs
1 lb. ground beef
1 pkg. taco mix
1 lb. grated Monterey Jack cheese
Salt
Salsa

Cook beef; season with taco mix and set aside. Beat eggs. Pour a little in a hot, greased frying pan. Place peppers on top and fill with meat or cheese or both. Fold the egg over like an omelet. Carefully lay in a casserole dish. Sprinkle with more cheese. Bake in 350 degree oven until cheese is melted, about 20 minutes or so. Serve with salsa. Makes 6 servings.
