CHOCOLATE CREAM CHEESE CUPCAKES 
Makes 2 dozen cupcakes.

1 (8 oz.) pkg. cream cheese
1 egg
1/8 tsp. salt
1/3 c. sugar
1 (6 oz.) pkg. chocolate chips

Beat cream cheese unitl soft. Add egg and sugar, blend until smooth. Add salt, mix. Stir in chocolate chips. Set aside.

1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1/4 c. cocoa
1 c. water
1/3 c. salad oil
1 tbsp. vinegar
1 tsp. vanilla

Sift flour, cocoa, soda and salt. Add water, sugar, oil, vinegar and vanilla. Line muffin tin with paper. Fill 1/3 full with batter, top with 1 heaping teaspoon cheese mixture. Bake at 350 for 30-35 minutes. Frost.

NOTE: Kids love these!
