AUNT KATHLEEN'S CHOCOLATE FUDGE 
2 c. sugar
3-4 tbsp. cocoa
3/4 c. milk
2 tbsp. butter
1 tsp. vanilla
1/8 tsp. salt

Place the sugar, chocolate and milk over low heat and cook until sugar is dissolved. Continue to cook without stirring until it forms a soft ball when dropped into cold water. Remove from stove, let cool a few minutes then add butter, salt and vanilla. Beat until creamy, then quickly turn into buttered pan. When firm, cut in squares. To vary the recipe, add chopped nuts, raisins, or marshmallows just before fudge is ready to pour into buttered pan.
