OATMEAL CAKE 
1 c. oatmeal
1 1/2 c. boiling water
1 c. brown sugar
1 c. white sugar
1/2 c. shortening
2 eggs, well beaten
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
Nuts, if desired

Pour boiling water over rolled oats and let stand to cool. Cream shortening and sugar; add eggs and beat well. Sift dry ingredients together; add to batter alternately with oatmeal mixture. Add vanilla and beat until smooth. Bake in oblong pan at 350 degrees for 30 to 35 minutes.

TOPPING FOR OATMEAL CAKE:

1/4 c. melted butter
1/2 c. firmly packed brown sugar
1/3 c. chopped nuts
3 tbsp. evaporated milk
3/4 c. coconut

Mix ingredients together and spread over hot cake. Put under broiler until bubbly and slightly brown.
