ZUCCHINI 'N CHEESE CORNBREAD 
1 1/2 c. flour
3/4 c. cornmeal
1/3 c. chopped walnuts (optional)
2 tbsp. sugar
4 tsp. baking powder
1 1/4 tsp. salt
1 c. milk
1 c. shredded zucchini
1 c. (4 oz.) shredded Cheddar cheese
1/2 c. chopped onion
1/4 c. oil
2 eggs, beaten

Mix all together and put in greased pan. Bake approximately 30 minutes in 400 degree oven until brown.
