CHEESE FRIED ZUCCHINI 
1/4 c. dry bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. flour
1 tsp. salt
2 med. zucchini, thinly sliced
1 egg, beaten
2 to 4 tbsp. vegetable oil

In plastic bag or shallow bowl, combine first four ingredients. Dip zucchini in egg; coat with bread crumb mixture. In medium skillet, heat oil; fry zucchini until golden brown and crisp, turning occasionally. Drain on paper towel. Serve immediately. Makes 3 to 4 servings.
