MARSHMALLOW ICING 
1 3/4 c. sugar
3/8 c. water
2 egg whites, room temperature
1/4 tsp. salt
1/2 tsp. cream of tartar
1/4 lb. marshmallows
1/2 tsp. vanilla
3 or 4 drops food coloring if desired

Place sugar, water, unbeaten egg whites, salt and cream of tartar in top of double boiler over boiling water. Beat with electric beater until soft peaks form. Remove from heat. Stir in marshmallows and beat until marshmallows are dissolved. Add vanilla and beat until spreading consistency. Will frost 8 inch layer cake.
