BETTER THAN POTATO SALAD | |
1 c. long grain rice 2 1/2 c. water 1 tsp. salt 1 tsp. butter 1 onion, chopped 2 c. celery, chopped 2 c. mayonnaise 4 tsp. prepared mustard 1/4 c. sugar 1/2 tsp. salt 4 hard boiled eggs, chopped 1 jar pimentos, sm. jar Bring water to a boil. Stir in rice, salt and butter. Cover and simmer 20 minutes. Remove from heat and let stand until all liquid is absorbed. Add onions and celery. Stir together mayonnaise, mustard, sugar and salt. Pour over rice mixture; toss thoroughly. Add eggs and pimentos, toss to blend. Chill completely. |
