MEXICALI MEATLOAF 
2 1/2 to 3 lbs. lean ground beef
2 pkgs. taco seasoning mix
2 eggs
2/3 c. taco sauce
1 c. grated Cheddar
2 c. corn chips (like Fritos)

Crush corn chips into a large mixing bowl filled with the other ingredients. Mix with your hands. Shape into a loaf and place in your crock pot for 6 to 8 hours on low. Leftovers can be crumbled for taco filling.

Pop this in the crock pot before you leave for a day of shopping in Las Vegas, it'll be ready when you get home!
