BANANA CREAM PIE 
3/4 c. sugar
1/2 tsp. salt
3 eggs, separated
1/2 tsp. vanilla
2 1/2 tbsp. cornstarch
2 c. milk, scalded
2 tbsp. butter
2 or 3 bananas, sliced
Baked pie shell

Scald milk in top of double boiler. Combine sugar, cornstarch and salt. Add to milk. Stir until slightly thickened. Place over bottom with boiling water and continue cooking (over hot water) until thickened (not too solid). Add some of this mixture to the beaten eggs, stir well, then add this to contents of pan, stirring well. Cook a few minutes longer.

Remove from hot water, add vanilla and butter. Stir, then cool. Cover baked pie shell with sliced bananas, cover with filling. Top with meringue or Cool Whip. Brown in 375 degree oven for 8 minutes.
