SAUSAGE BEAN SOUP | |
1 lb. fully cooked smoked kielbasa 1 med. onion, chopped 1 med. green pepper, chopped 2/3 c. uncooked rice 1 (28 oz.) can whole tomatoes, undrained 1 qt. homemade chicken broth 1 tsp. dried oregano 1/4 tsp. pepper 1 (20 oz.) can or 1 c. dry red kidney beans, cooked Cut kielbasa into 1/4 inch slices. Cook and stir onion and kielbasa over medium heat in 4-quart saucepan until onion is tender. Stir in the remaining ingredients, except beans. Break up tomatoes with a fork. Heat to boiling, reduce heat. Cover and simmer 30 minutes. Stir in beans. Heat, stirring occasionally, just until beans are hot, about 5 minutes. |
