ALL BRAN MUFFINS | |
3 c. (less 2 tbsp.) sugar 4 c. Kellog's All Bran 2 c. Nabisco 100% Bran 2 c. boiling water 5 c. flour 1 c. (plus 2 tbsp.) Crisco 5 tsp. baking soda 1 tsp. salt 4 eggs 1 qt. buttermilk Pour boiling water over Nabisco Bran and let stand while mixing other ingredients. In large mixer bowl cream sugar and Crisco, add eggs and beat well then add buttermilk and mix again. In large roaster pan or dutch oven, sift flour, soda and salt. Add All Bran, Nabisco Bran and creamed mixture and mix well with wooden spoon. Line muffin pans with paper cups or grease. Fill cups 3/4 full and bake in 375 degree oven for 20 minutes or more until done. It will take a little longer if the batter is cold. This makes 1 gallon and will keep in refrigerator for 4 to 6 weeks. Store in glass or plastic jars. One quart will make 23 muffins. |
