CARROT CAKE 
1 c. oil
2 c. brown sugar
4 eggs, well beaten
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. baking powder
1/3 c. pecan pieces
1/3 c. walnut pieces
1/3 c. raisins
3 c. medium grated carrots

Blend oil and sugar; add eggs. Sift dry ingredients together. Add to first mixture, beating well. Add nuts and raisins; slowly add grated carrots. Bake in 2 greased loaf pans at 325 degrees for 50 minutes. Cool, then ice.

ICING:

8 oz. cream cheese, softened
1 stick butter
1 lb. powdered sugar
2 tsp. vanilla

Beat all ingredients together until of spreading consistency.
