HOT POTATO SALAD 
8 med. size potatoes
1/4 c. chopped onion
1 c. mayonnaise
1/2 lb. cheese, shredded (I use sharp cheddar)
Salt and pepper (to taste)
1/2 lb. bacon, fried, drained
1/2 c. stuffed olives, sliced

Cook potatoes in water until done. Cook; peel and cut in chunks. In large mixing bowl mix potatoes with mayonnaise, cheese, salt and pepper, and onions. Place in casserole dish and cover with crumbled bacon and sliced olives. Cover. Bake at 350 degrees for 40-45 minutes. Serve while hot.
