MEXICAN LASAGNA 
16 oz. ground turkey
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. canned tomtoes, chopped
1 c. tomato sauce
1 pkg. taco seasoning mix
1-1/3 c. cottage cheese
6 oz. shredded cheddar cheese
2 eggs
6 (6-inch) corn tortillas
1 c. chopped fresh tomatoes
2 c. lettuce, shredded

Brown turkey with onions and pepper. Add canned tomatoes and tomato sauce and seasoning mix. Cook, uncovered, 5 minutes. In a bowl, combine cottage cheese, 4-ounces cheddar cheese and eggs. Spray 9 x 13 inch baking dish with Pam. Layer tortillas with meat and cheese mixture. Add the remaining 2-ounces of cheddar to top of casserole. Bake at 350 degrees for approximately 45 minutes. Garnish with fresh tomatoes and lettuce.
