BRAZIL NUT DATE CAKE 
3 c. Brazil nuts (2# unshelled 1# shelled)
1 lb. pitted dates
1 c. drained maraschino cherries
3/4 c. sifted flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 tsp. vanilla

Put nuts, dates and cherries in a large bowl. Sift flour, sugar, baking powder, and nuts over fruit; mix well with hands until all is coated. Beat eggs and add vanilla. Stir into nut-fruit mixture until well mixed. Turn into well greased and wax paper lined loaf pans. Bake in slow oven 300 degrees for 1 hour and 45 minutes.
