FRIED COOKIES 
6 egg yolks
1/2 c. sugar
5 tbsp. heavy cream
2 tbsp. vinegar
1 tbsp. grated lemon rind
1/2 tsp. ground cardamom
2 c. flour
Salad oil

Beat egg yolks for 2 minutes or until light and lemon colored. Add sugar gradually; beat for 15 minutes. Add heavy cream, vinegar, lemon rind and cardamom. Add flour and mix to make a stiff dough. Store in refrigerator overnight. Turn dough out on lightly floured board and roll out to a 1/8" thickness. Cut in diamond or other shapes about 3" to 4" long. If desired, cut a slit in the middle of the triangle and pull one end of dough through. Fry cookies until light brown in deep oil heated to 360 degrees. Sprinkle with confectioners' sugar before serving (if desired) Makes about 3 dozen.
