OLD FAMILY RECIPE FOR CROISSANTS 
1 pkg. yeast, granules
1 1/2 tbsp. sugar
1/4 c. milk, scalded, cooled
2 1/4 c. flour
1 c. butter
2 egg yolks

FILLING:

3/4 c. sugar
3 egg whites, beaten
1 c. chopped nuts

1. Mix yeast, sugar and milk. Let stand 5 minutes.

2. Mix flour and butter as if for a pie. Add egg yolks and yeast mixture. Mix thoroughly and place in refrigerator.

3. Filling: (Prepare in another bowl.) Beat sugar into egg whites, stiffly. Add nuts.

4. Dough: Divide dough into 4 parts. Roll each into 12 inch circles. Spread 1/4 filling on each circle. Cut into 12 wedges. Roll from outside and blend ends to form crescent.

5. Bake at 350 degrees for 15 minutes or until delicately brown.
