VEGETABLE PROTEIN PATTIES 
1/4 c. chopped raw almonds
1 c. cooked brown rice
1 c. cooked lentils
1 tbsp. soy sauce
1 tsp. dried oregano, crushed
3/4 tsp. dried thyme, crushed
1/4 tsp. black pepper
1/2 c. grated carrot (1 carrot)
1 c. rolled oats

Preheat oven to 350 degrees. Toast almonds in the oven for 8-10 minutes or until a deep golden brown. Watch carefully, they burn easily. Combine rice, lentils, soy sauce, oregano, thyme, black pepper in a food processor until smooth.

Place mixture in a bowl and add grated carrot, rolled oats and toasted almonds; mix thoroughly. Form mixture into 8 (1/4 cup) patties. Spray a skillet with nonstick spray and heat until a drop of water dances on the surface. Place patties in skillet and cook until lightly browned on both sides. Each patty contains about 124 calories, 3 gm fat.
