CHEESY SQUASH CASSEROLE 
2 lbs. squash
1 stick butter
1 can cream of mushroom soup
1 sm. carrot, grate fine
1 bell pepper
1 sm. onion
1/2 pt. sour cream
1 c. cheddar cheese
Parmesan cheese
8 oz. Pepperidge Farm stuffing

Mix all ingredients in a large bowl. Sprinkle Parmesan cheese on top. Bake at 400 degrees about 20 to 30 minutes.
