OLD FASHIONED (SOFT) SUGAR COOKIES | |
2 c. sugar 1 heaping (rounded up) c. butter (2 sticks butter & the rest in shortening) 4 eggs 4 c. flour 1 tsp. salt (or less) 1 tsp. baking soda 1 c. buttermilk 4 big tsp. baking powder 2 tsp. lemon extract Cream sugar, shortening and eggs with mixer. Combine all the dry ingredients, except soda. Beat soda with buttermilk. Alternate flour mixture and liquid into creamed mixture. Mix with mixer on slow speed. Dough will be a little sticky. Drop by small, medium or large spoonfuls (swirled) on greased cookie sheet. Bake at 350 degrees for 10 minutes. ICING: Powdered sugar, a little ReaLemon and water to spreading consistency. |
