SHERRY'S GREENS WITH BACON | |
3 slices bacon 1/2 cup sliced red onion 1/2 tsp. salt 1/4 tsp. pepper 1 tbsp. apple cider vinegar 2 (10 oz pkgs each) fresh spinach In a large skillet over medium-high heat, cook bacon until crisp. Drain on paper towels. Discard all but 2 tablespoons fat from pan. Add onion, salt and pepper to pan. Cook, stirring occasionally until softened. Add vinegar, cook 1 minute. Stir in 1 pkg spinach, cook until just starting to wilt. Stir in remaining spinach. Cook until just wilted. Break bacon into 1" pieces, stir into spinach, serve. Submitted by: Sherry Monfils |
