“LEISHA'S EASY CHEESY SCALLOPED POTATOES” IS IN:

LEISHA'S EASY CHEESY SCALLOPED
POTATOES
 
4 to 6 medium potatoes
flour
salt
pepper
cheese
milk

Preheat oven to 350°F.

Grease a casserole dish.

Wash and peel potatoes if desired. Slice potatoes about a 10th of an inch. If cut too thick, the potatoes won't cook. Lay one layer of the sliced potatoes in the casserole dish. Lightly sprinkle the layer of potatoes with flour and then sprinkle with salt and pepper.

Sprinkle with a light layer of grated cheese. Repeat with another layer of sliced potatoes, flour, salt, pepper and cheese. Repeat this process until the casserole dish is 1/2-inch from top.

On the last layer only use salt, pepper, and cheese. Pour enough milk into casserole dish so that 1 inch of milk will cover bottom of dish. Cover and cook for 45 minutes to an hour or until the potatoes are fully cooked.

For fun, you can dice ham or cooked bacon or even add veggies in between the layers of potatoes. Broccoli is the best.

Very easy and delish! I used a mandolin for perfectly uniform thinly sliced potatoes. I also put one layer of thinly sliced onions in the middle. A keeper!

Always use a mandolin for perfect slicing. Chopped onion between layers would be great. Colby Cheese would also make this rich. This recipe on my upcoming meal list.

HI! This sounds like a fun and healthy meal for the family that I am definitely going to give a go. I like how you have simplified this recipe. I would have originally slaved over the stove and dirtied a lot of dishes to create my "old" version. Including Broccoli I would add Cauliflower. Instead of Bacon I would add Bacon Bits for the extra flavor and less grease. I would still add my Mother's twist of Plain Panko Breadcrumbs on top. Panko's come in different flavors, and can even be homemade with a rolling pin. I would also slice up some fresh Elephant Garlic pieces in between each and every layer. The older the Garlic Bulb sits on a shelf the better the taste. FYI. Sometimes you might find a piece with a rot spot in it, so I just discard and keep searching. Anyhoo, good and all sounding easy and less money and time consuming recipe. Lookout for my take (in the future of course) for Crowd pleasing recipes. Tasty recipes.
