SOUTHERN PEANUT BUTTER MERINGUE
PIE
 
1 (9") pie shell, unbaked
1 c. confectioners' sugar
1 1/2 c. peanut butter
1/2 c. sugar
1/4 c. cornstarch
2 c. milk
3 egg yolks
2 tbsp. butter
1 tsp. vanilla

MERINGUE:

3 egg whites
1/4 tsp. cream of tartar
1 1/2 tbsp. sugar

Blend confectioners' sugar and peanut butter and spread 2/3 in pie shell. Combine sugar, cornstarch and milk, mixing until smooth over medium heat. Bring to a boil for 2 minutes, stirring constantly. Add some of this mixture to the egg yolks, stirring constantly, then, put egg mixture in pot, stirring constantly. Heat and cook until thick. Add butter and vanilla. Mix and pour into shell. Whip up egg whites into a meringue, adding sugar and cream of tartar. Spread over pie. Sprinkle remaining 1/3 of peanut butter mixture over meringue. Bake at 350 degrees for 10 to 12 minutes.
