BROCCOLI 'N CHEESE PANCAKES 
1 env. Lipton vegetable mix
1/2 c. plain dry bread crumbs
1 pkg. frozen chopped broccoli, cooked & drained
1 c. shredded cheddar cheese
1/4 c. milk
2 eggs, slightly beaten
1/4 c. oil

Combine soup mix and bread crumbs. Stir in broccoli, cheese, milk and eggs until thoroughly combined. Using 1/4 cup mixture for each, shape into 3" round patties, flatten slightly.

In large skillet heat oil and cook patties over medium heat turning once, 3 minutes or until golden brown. Serve warm.
