SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
2/3 c. sugar
1 egg
1 tsp. vanilla
1/2 stick melted butter

TOPPING:

1/2 c. brown sugar
1/3 c. self-rising flour
1/2 stick melted butter
1 c. chopped pecans
1/4 c. coconut

Mix first 5 ingredients together and pour into a baking dish. Mix all topping ingredients together and pour on top of potato mixture. Bake at 350 degrees for 25-30 minutes.
