MAINE CORN CHOWDER | |
1 onion, diced 2 thin slices salt pork 2 c. diced potatoes 1 tsp. salt 2 c. boiling water 1 can (2 c.) cream style corn 2 c. evaporated milk Dash pepper Fry out salt pork and dice it. Add diced onions and saute until transparent. Add boiling water, diced raw potatoes and salt. When the potatoes are cooked about 10 minutes, add corn and milk. Bring to scalding point. DO NOT BOIL. Serve piping hot with crackers. Makes 6 servings. |
