MUDRIGA (TOASTED BREAD CRUMBS) | |
Stale bread (very dry and very hard Olive oil Sugar Cinnamon Sifter or sieve Lg. black cast iron frying pan (preferred) Grate 6 cups of stale bread crumbs. Sift the crumbs to remove the larger crumbs. Roll larger crumbs into smaller crumbs, and sift with other crumbs. Mix 6 cups of sifted crumbs with 2 tablespoons of olive oil in a large bowl with your hands. The crumbs should be coated with oil. In frying pan over low heat, stir the oiled bread crumbs continuously until golden brown. Be careful not to burn. After crumbs are browned, pour into a large platter and add sugar with ground cinnamon according to taste. |
