MINESTRONE 
1/2 lb. string beans
3 sm. carrots
4 sm. onions
4 stalks celery with leaves
3 med. potatoes
1/2 can tomato paste
2 c. soaked dried limas
1 lb. fresh peas (optional)
1/2 lb. chopped spinach
Chopped parsley
1/2 c. olive oil
2 cloves garlic
1/2 c. Parmesan cheese
Salt and pepper
Broken spaghetti or noodles

Put first 8 ingredients in pot. Barely cover with water (cold). Add salt and pepper. Boil for 1 1/2 hours. Add spaghetti or noodles with spinach. When soft, add parsley, olive oil, cheese, and crushed garlic. Simmer 5 minutes. Remove from heat. Freezes well.
