CHICKEN BREASTS WITH ORANGE
GLAZE
 
4 boned chicken breasts (or unboned too)
4 tbsp. butter
1 med. onion, minced
1/2 c. frozen orange juice concentrate
2 tbsp. brown sugar
2 tbsp. chopped parsley
1/3 c. water
2 tbsp. soy sauce
1/2 tsp. ginger
1 tbsp. grated orange peel
1/2 tsp. paprika

In a saucepan, saute the chicken breasts in the butter until browned. Then remove the breasts from the pan when cooked and set aside. Place the onion in the saucepan or fryer and saute until wilted. Then add in the orange juice concentrate, brown sugar, water and parsley. Let the mixture cook a bit and then add in the soy sauce.

When the mixture thickens, add in the ginger and orange peel. Return the breasts to the pan and cook until heated through. Serve each breast with a bit of the orange sauce. Garnish with a sprinkle of paprika. Serves 4.
