CARIBBEAN CHICKEN 
2 tbsp. olive oil
1 c. onion
2 cloves garlic
4 chicken breasts
1 (16 oz.) can whole tomatoes
1 (13 3/4 oz.) can chicken broth
1 3/4 c. rice
3/4 c. ham, diced
3/4 c. water
1 tsp. basil
1 tbsp. Tabasco
1 tsp. pepper

Chop onion and mince garlic. Brown chicken in oil. Saute onion and garlic with chicken. In bowl combine tomatoes, broth, water, spices and Tabasco. Add to pot, heat to boil, then simmer covered 30 minutes. Add rice and ham and simmer 20 minutes covered.
