CAULIFLOWER CURRY | |
2 lbs. cauliflower (cut into small pieces) 4 eggs, beaten well 1 onion, chopped small 1 tsp. salt 1 tsp. pepper 1 green pepper, chopped small 1 tbsp. Crisco oil (can substitute butter) Mustard seeds Put oil in an iron skillet, when oil is warm add mustard seeds. When seeds break, add onion and green pepper, stir until light brown. Add cauliflower and stir for 2 to 3 minutes. Add salt and pepper, cover and cook, low heat, 5 minutes. Pour eggs over the mixture and let set about 1 minute, stir into mixture and continue cooking on low heat for 5 to 7 minutes. Taste for doneness. |
