VEAL CHOPS WITH LEMON BASIL
BUTTER
 
2 tbsp. soft butter
1 tbsp. finely chopped basil or 1/4 tsp. dried basil
1 tbsp. lemon juice
1/2 tsp. grated lemon peel
2 loin veal chops, 1" thick
Fresh basil sprigs

In small bowl, combine butter, basil, lemon juice and lemon rind. Cut a small pocket through fat side of each chop. Spread some butter mixture inside pocket and on both sides of each chop. Grill over medium low coals. Grill or broil 8 minutes; turn chips and grill another 6 to 8 minutes or until surfaces are browned and center is rare. Serve garnished with fresh basil sprigs.
